Yummy Gummies

This recipe is a perfect snack because it has A TON of protein, and tastes way better than a boiled egg. The only downside it that you’ll need a silicon gummy tray, but it’s not totally needed. You can also just put some plastic wrap over the bottom of any pan or tray and slice the gummies into bite sized pieces. It takes 15 minutes to throw together and one hour to wait until the gummies are set. Chris doesn’t like the texture too much, but who listens to him?

  • 3 packs of unflavored gelatin (27 grams)
  • 1/2 cup water
  • 3 tbsp Lemon juice
  • 2 tbsp sugar equivalent (I use ERYTHRITOL)

Boil everything in a little pot and whisk until there are no lumps. Add food coloring if desired. Pour mixture into tray and refrigerate until solid. (about an hour)

    • I’m glad you asked perfect stranger! I have made gummies using strawberry syrup, blueberry syrup, and even hibiscus tea instead of the lemon juice. Each of those flavors were nice, but lemon gummies are still my favorite. Sweet and Sour for the win!

  1. I wonder how these would taste if you replaced the lemon juice with sauerkraut juice.

Only one way to find out.

Thank you for the recipe, lovely Mrs. Pickles.
