Vegetable Carbonara

Carbonara is traditionally made with smoked pork cheek, and the only vegetable that goes any where near it is a clove of garlic. I use bacon and vegetables because it’s much easier and healthier.


  • 250 grams spaghetti (half a pack)
  • 50 grams bacon (about 5 slices)
  • 2 eggs
  • 1 egg yolk
  • 30 grams grated parmesan
  • half a zucchini
  • 1 small onion
  • 1/2 red bell pepper
  • 100 grams mushrooms (1/2 pack)
  • 1 clove minced garlic
  • salt and pepper to taste


Slice bacon and sautee with vegetables. Boil the pasta. In the meantime, grate parmesan and whisk with eggs and egg yolk. Once bacon, veggies, and pasta are done. Turn off all burners. Drain the pasta and reserve 1 cup pasta water. Then put everything together and toss until sauce thickens. If sauce is too thick, add a little pasta water. Salt and pepper to taste.
