Stuffed Bell Peppers

Stuffed bell peppers can be made 100 different ways. I just so happened to have raw bratwursts that needed to be cooked tonight, so I decided to take the meat out of its casing and make stuffed peppers. Using sausage for this application is great because the meat is already well seasoned and fairly fatty. This recipe is for 3 bell peppers, but I used half the red bell pepper in lasts night’s dinner, so 1/6 of the stuffing went into a little ramakin. Waste not, want not!


  • 3 bell peppers, any color
  • 400 grams raw bratwurst (1 pack)
  • 1/2 cup uncooked rice
  • 70 grams cheese
  • 1 cup water
  • 1 large tomato
  • 1 onion
  • 2 tbsp tomato paste
  • 1 beef stock cube
  • 1/2 tsp cayenne pepper
  • salt and pepper to taste



Simmer the rice and water in a small pot with the stock cube until cooked. Take the sausage out of its casing and cook with the onion. Cut the bell pepper in half and clean the seeds out. Cook the bell peppers in the microwave for 3-5 minutes to reduce oven cooking time. Add the tomato, rice,  and tomato paste to the sausage and onions and season the mixture to taste. Stuff the mixture into the bell peppers and top with shredded cheese. Cook at 200C/400F for 20 minutes.
