Pumpkin Cornmeal Fritters

So I got the idea for the recipe because I have a ton of pumpkin and a ton of cornmeal. These turned out so awesome, you should really give it a try!


  • 2 cups cornmeal
  • 1 cup milk
  • 1 egg
  • 1 cup mashed pumpkin
  • 1/4 cup sugar
  • 2 tsp baking
  • pinch of salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 3 tbsp powdered sugar for garnish
  • oil for frying


Mix ingredients and heat a cast iron skillet with one inch of oil on medium high heat (7 out of ten). Drop spoon of the dough in once oil is heated. Fry until golden brown, work in two batches. Once fried, drain on paper towels and sprinkle over powdered sugar. Recipe makes 16 fritters
