Microwave Sugar Plum Fairy Cake

So after one failed attempt, I finally created a really good microwavable plum cake. The first one had an egg in it and tasted like scrambled eggs with plums. Not good. This recipe is absolutely delicious, albeit much higher in calories than the original recipe I had in mind. But hey, you gotta live a little. Swap the sugar for erythritol if you want to lower the calories, but for the love of God, don’t leave out the butter! A glass bowl works well with this recipe, but you can do it in a mug and it’ll come out just as good.


  • one small plum
  • 1/4 cup flour (30 grams)
  • 1 tbsp butter (14 grams)
  • 1/8 cup sugar (25 grams)
  • 1/8 cup milk (couple splashes)
  • 1/2 teaspoon baking powder
  • vanilla extract
  • pinch of salt
  • powder sugar for garnish (optional)


Melt the butter in the microwave, then add the sugar, vanilla, and salt and mix together. Then pour in the flour, baking powder, and milk. Stir quickly until it just comes together. Pit and slice the plum and arrange pieces on the top of the batter. Microwave for a couple of minutes until cooked. Our microwave is really weak, so mine took 2 1/2 minutes. Once cooked, dust with powdered sugar.
