Jalapeno Hush Puppies


Hush puppies are a lot easier than you might think. It’s just corn bread batter without all of the usual liquid. Add jalapenos or anything you like!

Ingredients

  • 2 cups cornmeal
  • 1 cup milk
  • 1 egg
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp finely chopped onion
  • 1 tbsp minced jalapeno
  • oil for frying

Directions

Mix all ingredients, add a splash of water if batter is far too dry. You should be able to pick up a bit and roll it into a ball. Heat a cast iron skillet with an inch of oil on medium high heat (7 out of ten). Roll golf ball sized pieces of batter and drop in oil. Fry until golden brown. Recipe makes 16 hush puppies.
