Healthy Meatballs

Meatballs are something that most people think take a long time (I know my mother’s recipe takes hours), but this one can be done start to finish in about 30 minutes if you’ve done the prep. The spinach is added for a boost of nutrition, and you hardly taste it at all so it’s perfect for kids or picky adults. Leave out italian herbs, replace parmesan for feta cheese, and serve with tzatziki sauce¬†for greek meatballs.


  • 500 grams minced meat (a pound)
  • 1 cup frozen spinach (thawed and drained COMPLETELY, about 200 grams)
  • 1/2 cup Parmesan (pre-grated is fine) 50-ish grams
  • 1/3 cup bread crumbs
  • 1 egg
  • 1 tablespoon Italian herbs
  • salt and pepper to taste



Combine everything with your hands, divide mixture in half, then half those pieces into 4 chunks. Then take each chunk and make four little meatballs. Recipe should make 16 meatballs. Put them in oven set to 400F/200C for about 20 minutes. Serve with basic tomato sauce over noodles or zoodles!
