Corn Bread


This is my go to recipe for cornbread. It’s simple, easy, and most importantly: IT HAS NO SUGAR!! Because the people putting sugar in their cornbread are the same people putting pineapple on their pizza, and you don’t want to be those people. 

Ingredients

  • 250 grams corn meal (about 2 cups)
  • 1 cup milk
  • Splash of water if needed (batter should be loose)
  • 1 egg
  • 1 tsp salt
  • 2 tsp baking powder
  • 2 red chilis (optional)
  • 1 tbsp oil

 

Directions

Mix all ingredients quickly and pour into greased loaf pan or tiny cast iron skillet. Bake at 400F/200C until golden. If using self rising corn meal, omit the baking soda.

Side note: 300 calories seems like a lot for a side dish/ piece of bread, but according to MyFitnessPal, one piece is also almost 10 percent of your daily iron requirements!
