Chris’s Chocolate Mousse

Chris’s chocolate mousse is so amazing because he sneaks a bit of rum in the mix. Basically any booze would be amazing in this, so maybe next time I’ll get him to add some amaretto in it. Yum!


  • 133 grams heavy cream (about 1/2 cup)
  • 45 grams sugar
  • 2 egg whites
  • 2 egg yolk
  • 100 grams dark chocolate (one bar, 85% cocoa is best)
  • 2 tbsp rum



Separate egg yolks from whites. Add rum and sugar to yolks, mix until creamy and light yellow. Whip cream and refridgerate. Whip egg whites until stiff peaks form. Melt chocolate in microwave ten seconds at a time, stirring occasionally. Once melted, add egg yolk mixture. Then mix in egg whites, then fold in whipped cream.
