So the pantry is getting a bit bare in terms of snacks, and Chris and I had a major chocolate craving. Luckily, we ALWAYS have the basics for baking: unsweetened coco powder, flour, sugar, milk, butter, baking powder, and eggs. These ingredients can make just about any sweet: cake, hot chocolate, brownies, pancakes, muffins, cupcakes, and cookies. So chocolate cookies it is! This recipe makes 16 decent sized cookies, and you can replace the walnuts with chocolate chips or leave them plain.
- 3/4 cup all purpose flour (100 grams)
- 1/4 cup unsweetened coco powder (30 grams)
- 1/2 cup room temperature butter (115 grams)
- 1 cup sugar (225)
- splash of vanilla extract
- 1 egg
- pinch of salt
- 1/2 tsp baking powder
- 50 grams walnuts (about 1/2 cup)
Cream the butter and the sugar with an electric mixer, add the egg, salt, and vanilla, mix well. Then add flour, baking powder, and coco, and mix well. Then stir in the nuts. Spoon the dough out on two parchment lined baking sheets (makes 16 cookies), cook at 350F/175C for 10-15 minutes. Take the cookies out and let cool completely before trying to remove them from the baking sheets.
