Chicken Tikka Masala

Chicken Tikka Masala is a great week night dinner because it is good with tons of veggies and cooks up really quickly. To make it lower calorie, just switch the heavy cream for diet cream. To lower the cost of the ingredients, use chicken thighs instead of breasts, and use frozen veggies instead of fresh!

  • 600 grams chicken breasts
  • 1 small head of cauliflower, chopped
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 2 cloves minced garlic
  • 1 tbsp minced ginger
  • 1 can of diced tomato (400 grams)
  • 1 cup plain yogurt (200ml)
  • 1 cup heavy cream (200ml)
  • 2 tbsp cumin
  • 1 tbsp coriander
  • 1 tbsp tumeric
  • 1 tsp cayenne pepper
  • 1/2 tsp cinnamon
  • 1 tbsp oil
  • salt to taste

Cut chicken into chunks and cook with diced onions. Once chicken is cooked, remove from pan and set aside. Add all spices to the pan and let toast slightly. Then add garlic and ginger. Then add the rest of ingredients and simmer until veggies are cooked, then add chicken back and serve with rice.
